Brown the meat in a large skillet. Add the diced onions and garlic. Once the meat is fully cooked, stir in the diced tomatoes, tomato paste, and seasonings. Simmer uncovered for 1 ½ hours, stirring occasionally until the sauce has thickened. While the sauce is simmering, peel the zucchini and slice it lengthwise. Make each slice a little thicker than a lasagna noodle. A mandolin slicer works well for this if you have one. Preheat the oven to 375 degrees F. Grease your baking dish with olive oil. Spread a thin layer of meat sauce in the bottom of the baking dish. Add a layer of zucchini slices. Spread 1/3 of the remaining sauce over the zucchini. Repeat layers ending with meat sauce on top. Bake for 30 minutes. Just a heads up – without noodles and a cheese in the mix, this lasagna doesn’t maintain a neat stacked form like traditional lasagna. It will be a little messier on your plate, but it will still be 100% delicious! Can't wait to start?!!! Here's your grocery list! I did all of my shopping at Trader Joes yesterday and found everything I needed. Veggies Zucchini (4) Other Veggie of Choice (for grilled lavender veggies) I like using 1 zucchini and 1 bundle of asparagus Yellow Onion Bag of Spinach Avocado (2) for Egg cupcakes Shredded Cabbage (or a head of cabbage) Basil Parsley Fresh Mint Leaves 2 Bell Peppers (any color) 1/2 head of cauliflower 1 bag of carrots Fruit Blueberries Strawberries 3-4 Apples 1 banana Meat 2 lbs Italian Sausage Meat of Choice for Breakfast Ground Turkey Chicken Breasts (for apple chicken salad...you can also buy the pre-made kind to save a step) Other 2 24oz pasta sauce (make sure it only lists ingredients that are paleo) 6oz can tomato paste (save some tomato paste for both dinners Slow Cooker Bell Peppers and Lasagna) 2 14.5oz cans of diced organic tomatoes Garlic Almond or Coconut Milk 1 bottle of Fizzy Water plan (you'll add 1-2 drops of your favorite EO later Lemon, Lime, Grapefruit, Orange) 1 carton of Eggs 1 can sun dried tomatoes 1 bag of almonds Chia Seeds Coconut Flakes Young Living Essential Oils *(if you ONLY have the Premium Starter Kit you can do most of these with the oils in your kit) Lemon Lavender Peppermint (optional) Lime (optional) Oregano (don't forget anyone can enter to win a sample of this by July 30th.....) check out the Spaghetti Squash recipe on the FB page! Over the fall my slow cooker broke and I was so upset. If I had to own one cooking tool it would likely be a slow cooker since it's made my busy life so much easier. I try to do a slow cooker a few times a month to keep things easy. I was gifted by my siblings in-law the amazing Slow Cooker from Williams Sonoma that is probably one of the best cooks tools ever invented, so it makes life so easy. I am always on the hunt for new ways to try out my slow cooker. I'll admit I'm a HUGE fan of Rachael Ray. Yes, she basically cooks nothing that is paleo (mostly pastas and things that I'd consider outside of my normal diet.) I'll watch her show mostly because I've learned so many tips on how to cook from her and she makes such gourmet looking meals that are actually very easy and accessible that I can adapt to a more paleo lifestyle. During the winter she had Bob Harper, (biggest loser trainer + CrossFit fan) on the show and this recipe is adapted from what he shared. He's been on the show more and more doing paleo meals, so it's totally worth watching. Plus, everything is on her website to search on your own. What I have grown to love about Bob Harper is that he has completely changed into a CrossFit fanatic, paleo eating trainer over the years. No longer does he promote "chewing gum" to curb your appetite, but instead opts for healthy and sensible meals that are easy and accessible. He said he never knew how to cook and had to learn, which is why his recipes are so accessible and easy to share. This is adapted from something I tried that I never thought would taste good (especially for my husband and toddler) who wouldn't eat cauliflower if I put it in front of them. BUT, if you hide it with flavor and cook it long enough they'll eat it all and not even realize you've just served them a plate full of veggies. This is one of my favorites -- enjoy! Peppered Paleo Egg Muffins This is a classic paleo favorite mixed with some Young Living Black Pepper essential oil for a variety that is a hit! I've really enjoyed sharing how to use Young Living essential oils in a different way for cooking with all of you. One of the ruts that I know I get into with cooking is making the same things over and over again, so this has been a great chance to share some of my favorites with you while learning some new ones from Taylor McBride, who is co-hosting the challenge. The essential oils we use from Young Living are incredible. I bought my kit back in the fall and love using so many of the 11 everyday oils (lavender, stress away, thieves, panaway, peppermint, lemon, Copaiba, RC, DiGize, frankincense, and purification) that come in the kit. One of my favorite things about these oils is using them in the diffuser in addition to cooking. We just re-did our kitchen prepping for baby #2 (due in 6 weeks --yikes) and the diffuser adds such a nice smell to our home. It reminds me of walking into a spa and having it on during meals that I've prepped with these paleo recipes just adds a special treat for dinner time. If you are interested in purchasing check out info here. Some of my favorite combos to diffuse while cooking for the summertime (and -- yes these oils can be combined in the diffuser). It's like a fancy candle without the chemicals and much safer for little hands and paws. Lime and Spearmint- It's like a mojito! Lemon and Lavender- Summertime Spritzer Citronella (JUST NEW BACK IN STOCK!!!)- Grilling Away, But Keep the Bugs Away *If you have a Premium Starter Kit already try Purification and Lavender together as well Orange: Probably one of my favorites helps keep the mood happy in my kitchen, especially when my toddler wants food N-O-W Enjoy this recipe for breakfast this week!!! INGREDIENTS: (yields 12) 8 whole Eggs 1/2 cup Almond or Coconut Milk 2 tablespoons Parsley, chopped 1/2 teaspoon Kosher Salt 2 drops Black Pepper Essential Oil 1/2 cup Bacon, diced optional- Avocado you can also add a drop of Young Living Lime essential oil on top for added flavor! DIRECTIONS: Preheat your oven to 375 degrees and grease your muffin tin with olive oil. Add eggs, milk, salt, pepper and chopped parsley into a large measuring cup and whip until light and frothy. Evenly pour egg mixture into prepared muffin cups. Drop in a few pieces of the bacon and slide into the preheated oven. Bake for 20 minutes or until the eggs are set. Let cool slightly and serve or let cool completely and store in an air-tight container for up to one week. My favorite way to eat these is to add a few slices of avocado on top! |
