Peppered Paleo Egg Muffins This is a classic paleo favorite mixed with some Young Living Black Pepper essential oil for a variety that is a hit! I've really enjoyed sharing how to use Young Living essential oils in a different way for cooking with all of you. One of the ruts that I know I get into with cooking is making the same things over and over again, so this has been a great chance to share some of my favorites with you while learning some new ones from Taylor McBride, who is co-hosting the challenge. The essential oils we use from Young Living are incredible. I bought my kit back in the fall and love using so many of the 11 everyday oils (lavender, stress away, thieves, panaway, peppermint, lemon, Copaiba, RC, DiGize, frankincense, and purification) that come in the kit. One of my favorite things about these oils is using them in the diffuser in addition to cooking. We just re-did our kitchen prepping for baby #2 (due in 6 weeks --yikes) and the diffuser adds such a nice smell to our home. It reminds me of walking into a spa and having it on during meals that I've prepped with these paleo recipes just adds a special treat for dinner time. If you are interested in purchasing check out info here. Some of my favorite combos to diffuse while cooking for the summertime (and -- yes these oils can be combined in the diffuser). It's like a fancy candle without the chemicals and much safer for little hands and paws. Lime and Spearmint- It's like a mojito! Lemon and Lavender- Summertime Spritzer Citronella (JUST NEW BACK IN STOCK!!!)- Grilling Away, But Keep the Bugs Away *If you have a Premium Starter Kit already try Purification and Lavender together as well Orange: Probably one of my favorites helps keep the mood happy in my kitchen, especially when my toddler wants food N-O-W Enjoy this recipe for breakfast this week!!! INGREDIENTS: (yields 12) 8 whole Eggs 1/2 cup Almond or Coconut Milk 2 tablespoons Parsley, chopped 1/2 teaspoon Kosher Salt 2 drops Black Pepper Essential Oil 1/2 cup Bacon, diced optional- Avocado you can also add a drop of Young Living Lime essential oil on top for added flavor! DIRECTIONS: Preheat your oven to 375 degrees and grease your muffin tin with olive oil. Add eggs, milk, salt, pepper and chopped parsley into a large measuring cup and whip until light and frothy. Evenly pour egg mixture into prepared muffin cups. Drop in a few pieces of the bacon and slide into the preheated oven. Bake for 20 minutes or until the eggs are set. Let cool slightly and serve or let cool completely and store in an air-tight container for up to one week. My favorite way to eat these is to add a few slices of avocado on top!
