I'm getting ready to shop, chop, and get oiled to kick off the #essentialpaleo challenge next week! The challenge starts on July 1st and ends July 31st. Starting July 1st we’ll post the first 5 recipes! The recipes will be suggestions for two dinners (with plenty of lunch leftovers), one lunch that can also be used as a dinner, a new snack or appetizer, and a new summer beverage to try!
Veggies + Fruit:
4 medium zucchinis
1 yellow onion
1 bundle asparagus
1 12-ounce bag trimmed green beans or haricots verts
1 Tomato or a handful of small tomatoes
Bag of baby carrots
3 Apples (suggested Pink Lady or Gala)
Bundle of Lemons (need around 5-6)
Pick one Meat of your choice
Spices + Ingredients:
Extra Virgin Olive Oil
